First both carrots and green chillies should be cut into small pieces. Then add sesame seeds and cumin in a pan and fry till golden brown. Then add a little oil in the same pan. Once the oil dries well, add the chopped carrots, green chillies and grated coconut and stir well. Then put everything in a mixing jar and add salt, tamarind and a little water and grind well. Then pour the oil into a pan and when the oil dries well add the mustard, eggplant and Urad dal and season. Then add curry leaves and fry. Then grind it and add the mixture and stir well. Prepare wonderfully tasty carrot chutney. It would be great to eat it with uppuma, pongal, itli, dosa and chapati.
